GF Rice Seviyan
Ingredients
2 tbs butter
200gm roasted rice vermicelli
2½ cup hot water with pinch orange food colour dissolved
3 or 4 strands of saffron soaked in a little hot water
½ cup sugar
2 tbs golden raisins
10 sliced almonds
10 slivered pistachios
¼ tsp freshly ground cardamom
Method
Heat the butter in a large saucepan.
Add the rice vermicelli and fry until golden brown.
Add the water and the saffron, mix and cook for a few minutes.
Add the sugar, raisins, nuts and cardamom.
Turn the heat down and cook for a further 30 minutes until all liquid is absorbed.
For another option, cook in 3 cups milk, add extra dried fruit and nuts for a seviyan kheer.
