Mandazi

Ingredients

  • 3 cups GFG flour
  • 2 tsp instant yeast
  • 7-8 tbs sugar
  • 1 tsp cardamon (optional)
  • 1¼ cup warm coconut milk
  • 2½ tsp warm oil

Method

  1. Mix flour with sugar and yeast.
  2. Add cardamom, if using, and oil. Rub in.
  3. Slowly mix in coconut milk.
  4. Let the dough rise in a warm place for 2 hours.
  5. Knead again. Divide into balls.
  6. Roll out each ball and cut into four.
  7. Cover with damp cloth and leave to rise again for 45 mins.
  8. Deep fry.
