Mandazi
Ingredients
3 cups GFG flour
2 tsp instant yeast
7-8 tbs sugar
1 tsp cardamon (optional)
1¼ cup warm coconut milk
2½ tsp warm oil
Method
Mix flour with sugar and yeast.
Add cardamom, if using, and oil. Rub in.
Slowly mix in coconut milk.
Let the dough rise in a warm place for 2 hours.
Knead again. Divide into balls.
Roll out each ball and cut into four.
Cover with damp cloth and leave to rise again for 45 mins.
Deep fry.
