Gajjar Ka Halwa
Ingredients
2 lbs carrots, peeled and grated
1 tbs Gluten-Free Guru plain baking flour
1/2 can (175ml) evaporated milk
1/2 cup sugar
1/2 cup whole milk
1/2 cup (4oz) butter
1/2 tsp cardamom
1/4 tsp nutmeg
8-10 strands saffron
15-20 raisins or sultana
Garnish
sliced almonds
pistachios
white poppy seeds
Method
Melt butter in pot, add carrots, cook on medium heat for 20-30 min, stirring continuously until butter starts to separate.
Add remaining ingredients and continue cooking on low heat for approx 1 hour, stirring continuously making sure it does not stick to bottom.
Mixture will dry out and look caramelized.
Garnish with slivered almonds, pistachios and white poppy seeds. Serve warm.
