Cardamon and Saffron Cake

Ingredients

  • 175g Soft butter
  • 175g Golden caster sugar
  • 3 Large eggs
  • 225g Gluten- Free Guru self-raising flour
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • ¾ strands saffron
  • ½ tsp ground cardamon
  • 2 drops yellow food colour

Garnish

  • Crushed rose petals
  • Slivered almonds and pistachios
Oven: 160-180°C

Method

  1. Preheat oven to 160-180°C and grease tin.
  2. Put butter, sugar, eggs and flour in a bowl. Beat with wooden spoon for 2-3 minutes, then with an electric beater for 1-2 minutes.
  3. Stir in spices with a wooden spoon.
  4. Mix in baking powder and vanilla essence and food colour.
  5. Tip mixture into tin and garnish with silvered almonds and pistachios, crushed rose petals
  6. Bake for 50 minutes.
