GFG Cardamon and Saffron Cake
Ingredients
175g Soft butter
175g Golden caster sugar
3 Large eggs
225g Gluten- Free Guru self-raising flour
1 tsp baking powder
2 tsp vanilla extract
3 or 4 strands saffron
½ tsp ground cardamon
2 drops yellow food colour
Garnish
Crushed dried rose petals
Slivered almonds and pistachios
Oven: 160-180°C
Method
Preheat oven to 160-180°C and grease tin.
Put butter, sugar, eggs and flour in a bowl. Beat with wooden spoon for 2-3 minutes, then with an electric beater for 1-2 minutes.
Stir in spices with a wooden spoon.
Mix in baking powder and vanilla essence and food colour.
Tip mixture into tin and garnish with silvered almonds and pistachios.
Bake for 50 minutes.
